- Susana Pinho & Nuno Bastos The care taken in the production of this São Domingos Sparkling has been widely rewarded by the sensation and trust of many consumers who enjoy it with their meals, especially with the famous roasted pig from the "Bairrada" region of Portugal.
Perfectly ripe grapes picked by hand at the ideal state of maturation for the elaboration of base wines for sparkling. Pressed grapes directly topneumatic press, just gathering the must of the dripping and the frist pressing, up to 0.5 bar. Then fermenting in stainless steel deposits at a controlled temperatures of 18ºC.
