Kompassus Cercial White Wine presents citrus-coloured wine with greenish tones. Mineral notes, citrus fruit and some vegetal flavours. A very fresh wine, but with volume in the mouth and a long finish. Very gastronomic.
Cercial harvested in the first week of September. Pre-fermentation skin maceration for 4 hours, followed by gentle pressing. Start of fermentation in stainless steel at controlled temperature. Final fermentation in used 400 litre French oak barrels for 10 months with batonnage.
