The harvest takes place at the end of September under the auspices of the patron saint S. Miguel. As is natural in upland wine the picking is done manually so as not to damage or adulterate the grapes. In the cellar, the fruits are squeezed in a traditional way in a granitic stone wine press, as tradition says.
