Tasting Notes
The nose is fresh and appealing, with a feeling of sweet citrus in a floral background, with hints of white fruit and peach. In the mouth it is full and vigorous, with a pronounced acidity, creamy and full of flavour
Vinification
After static decanting, fermentation took place in a stainless-steel tank at controlled temperatures of about 15ºC. After the normal period of resting in a tank, the wine was batched, stabilized and bottled.

<p></p> <p>Natus White Wine</p> <p>At the heart of Vidigueira, in the southern foothills of Serra do Mendro, in poor schist soils, the vines are planted in a hot climate, buffered with cool nights. The traditional grape varieties, mainly Roupeiro, Antão Vaz and Gouveio, were hand-picked and foot trodden for 2 days.</p> <p>At the spontaneous start of fermentation, the grapes were pressed and the must kept in 19th century clay pots (Talhas) and used oak</p> <p>barrels until the end of the alcoholic fermentation. The wine ages for 8 months in full lees, with a slight agitation every month.</p>

<p>Serving this wine at a temperature of 16º- 18º C is recommended to fully savor its intricate flavors. It is an excellent choice to accompany strong dishes such as game bean stew, duck rice, hare rice, a partridge dish known as "six hundred devils", a Portuguese steak, or even a board of soft cheeses from Azeitão or Serra. The clay soil in which the grapes were grown lends the wine additional complexity. The grapes were harvested manually in September and transported in 10 kg boxes to prevent crushing. The fermentation process took place in a stainless steel vat for three weeks, with the temperature controlled at 24º C. After alcoholic and malolactic fermentation, the wine was aged for 28 months in new French oak barrels, followed by additional aging in the bottle.</p>
