In 1999, with the end of the superior studies in Viticulture and Enology of João Paulo Gouveia, son of João Coelho Gouveia, they decide to create their own wine. The vineyards were restructured, others were acquired and a modern wine cellar was built and with a high technology, all respecting the culture of the Dão demarcated region. <p>Casa da Passarella O Fugitivo Baga shows a open colour. On the nose, it typically offers aromas of red fruits, often accompanied by vegetal notes and sometimes hints of licorice or cherry. On the palate, Baga wines are generally characterized by their high acidity and firm, well-structured tannins, leading to a long, persistent finish. Some Baga wines, especially those from Dão, can also show notes of pine or earthiness. Given its structure and acidity, "O Fugitivo Baga" is an excellent wine for food pairing. It harmonizes beautifully with rich, fatty dishes, such as roasted pork loin, roast suckling pig, or game meats. This vineyard, called Negrosa, is in Vila Nova de Tazem, Serra da Estrela sub-region. The main characteristics are the altitude – 470 to 500 meters, the soil composition – granite stones and sand, and the age of the vines – approximately 30 years old. Delicate aromas with fruit character and some balsamic and peppery notes. Very elegant in the mouth with high felling of freshness and great complexity and concentration.
