Built between February and September 2004, according to a project by the architect Carlos Ramos, our winery at Quinta de S. Mateus uses the most classic concept of winemaking.

Filling a vertical cut 18 meters high on a slope of Vinha da Costa facing south and west, the construction allows the force of gravity to be used throughout the winemaking process, from the entrance of the grapes to the final pressing. During the vinification process, no yeasts, enzymes or bacteria are added.
