The grapes were harvested by hand, in 20kg boxes, and at night, providing a more careful selection and better preservation of the aromas. In the cellar, they pass through the sorting table where a rigorous selection is made, and then they enter the fermentation vats by gravity. Spontaneous alcoholic fermentation.
