Vinification
The hand-picked grapes are de-stemmed and then cooled down through thermal shock to 10°C. After two days of cold maceration the wine ferments in small steel tanks. The maturing takes place in new barrique barrels made from French oak.

The must was transferred to a stainless-steel vat where it remained at a temperature of 8ºC for 48 hours until it was decanted. Alcoholic fermentation took place in a stainless-steel vat with a controlled temperature of 14º C during a 30 days period.</p>
