The history of Favaios is lost in time. Its name stems from "Flavius", an ancient Roman settlement that used to belong to the territory of Panóias. It was in this town in the Demarcated Douro Region that, since 1952, the Favaios Cooperative Wine Cellar became on of the largest and most renowned in the country due to unmistakeable quality of its Aperitivo and Moscatel de Favaios. Recent investments over the last few years, along with major strategic decisions and a bold vision are driving Adegga COOP de Favaios to new successes.
The Adega Cooperativa de Favaios mission is to continue to promote Moscatel de Favaios as one of the most important categories of Portuguese Wines and expand internationally their markets like the Oporto Wine. The winery also wants to contribute to the socio-economic development of its associates and be one of the most important centres of regional development. The vision is to be, until 2012, the largest "Adega Cooperativa do Douro", leading the innovation of Moscatel de Favaios to offer unique experiences for consumers, as well as develop a diversified portfolio of Wines beyond Muscat.
|-||The fermentation takes place in stainless steel vats at a controlled temperature of 23 to 25ºC for about three days with intense pellicular contact. It is interrupted then with the addition of spirit to halt fermentation then after the maceration continues for another 4-5 days, the wine obtains it's elevated alcoholic content and residual sugar. Followed by a process of ageing in oak casks during several years. After the aging, the wines from the best vintages are chosen to create the final blend, this wine integrates wines from the 1989, 1999 and 2004 vintages in different proportions to achieve an average age of around 10 years.|
